(A quarter beef will be approx. 1/2 of this. We can fill your order when a whole order is met.)
WHAT DO YOU GET WITH A HALF BEEF
If you want more ground beef and less roasts, we can cut your beef accordingly.
Below is an example of the list of the cuts you can receive with your freezer ready beef.
THIS IS ONLY A GUIDE.
Your beef may vary according to your cutting instructions, and the weight of the carcass.
A half will require about 12 cubic feet of freezer space.
4 to 5 Chuck Roasts, 3 to 4 pounds
4 to 5 Arm Roasts, 3 to 4 pounds
2 Sirloin Tip Roasts, 3 to 5 pounds
2 to 3 Top Round Roasts, 3 to 5 pounds
2 to 3 pounds of Cubed Round Steak
4 to 5 Filet Mignon Steaks 1" thick
5 Top Sirloin Steaks 1.5" thick
1 Flank Steak
1 Brisket
8 to 10 Rib Eye Steaks 1" thick
10 to 12 Kansas City Strip Steaks 1" thick
Approx. 90 - 100 pounds Ground Beef
Estimated total pay for 1/2 beef including processing may equal approx. $625. - $750.
HOW DOES ALL OF THIS WORK?

Prices depend on weight and packaging choices.
For example ONLY:
The actual weight for meat from an 800 lb beef would result in an estimate take home weight of 250 lbs due to skin/bone loss. (Therefore half would equal 400 lbs live weight and 125 lbs take home weight)
If you do not own your own meat: Your total cost will include:
LIVE WEIGHT
When meat is brought in it is weighed.
The owner of the meat will receive payment for the live weight meat.
The price is based on average local market value price for the day.
Processor will receive transporting and slaughter fees.
You are now the owner of this meat. (Whole, half or quartered)
All meat tagged with current owners name.
CURRENT MEAT OWNER COSTS
HANGING WEIGHT
After the slaughtering is completed approximately 50% of Live weight is lost, resulting in the hanging weight used to calculate the processing fee.
TAKE HOME WEIGHT
After the meat is deboned and packaged (approximately 40% loss of hanging weight)
Your total price is calculated based on:
1. Live Weight (paid to the owner of the meat.)
2. The Hanging Weight (charged as processing fee)
3. Pickup or delivery charges as well as slaughter fees.
4. Extra processing requests. (Smoked, sausage, etc)
EXAMPLE COST FOR TAKE HOME MEAT
If the LIVE WEIGHT of your half beef was 400 pounds you should expect to TAKE HOME approximately 125 pounds of meat. (Extra processing requests not included)
For an estimated value of $625 - $750. ($5.00 - $6.00 per lb)
BENEFITS OF FARM TO HOME TO PLATE
This price is dramatically less than store purchased meat, as the price includes your choice of cuts which may include steaks, roasts, and ground.
Meat purchased from the local farmers are hormone free, and live their life grazing on pastures, of 20-500 acres.
I hope that this helps those who are new to processing understand the way it works. When I was new to processing it was difficult to grasp this concept, that take home weight was much less than the starting weight, therefore I wanted to clarify it for others.
